Mainstream English 1

By the end, you’ll confidently communicate with guests and colleagues in professional environments.

Principles of Management

You will learn the foundational principles of management, providing a comprehensive understanding of what it takes to effectively lead and coordinate within an organisation. You’ll explore key management perspectives, including planning strategies, organisational structures, motivation techniques, leadership approaches, control mechanisms, effective communication, and quality assurance practices.

Essential Cuisine 1

This module introduces you to the essential knowledge and skills for a commercial kitchen. You will learn basic technical skills, cooking styles, equipment usage, and procedures, along with specialised and classical kitchen preparation techniques. The module also covers a broad range of food knowledge, basic kitchen organisation, and essential safety considerations.

Principles of Marketing

This module equips you with a thorough understanding of marketing principles. You’ll cover topics like market analysis, the marketing mix, sales management, consumer behaviour, digital marketing, global marketing, and market research. Additionally, you’ll create and present strategic plans while enhancing your presentation and teamwork skills.

Business Communication

This subject helps you understand key aspects of business communication and develop the skills employers value. It emphasises proper language and a professional attitude in both speaking and writing, offering a comprehensive view of communication in the business world.

Food Safety and Sanitation

This subject gives you a solid understanding of food safety and sanitation, including contamination stages and best practices for different food service settings. Food & Beverage Cost Control

Essential Cuisine 2

This builds on the foundational culinary knowledge you gained in Essential Cuisine 1. You’ll deepen your understanding of various meat items and refine your skills in cooking methods such as roasting, grilling, and braising for meats like chicken, beef, seafood, fish, and lamb. The subject emphasises practical skills and teamwork, highlighting the importance of collaboration in achieving culinary excellence.

Principles of Accounting

This subject introduces you to key principles and techniques, including the Accounting Equation, Double-Entry System, Financial Statements, Bank Reconciliation, Depreciation, Business Finance, and the Time Value of Money. You’ll develop essential theoretical knowledge and practical skills for understanding and applying accounting effectively.

Introduction to Facility Management

Academic Writing and Study Skills

Hotel Operations Management

This module provides you with comprehensive knowledge of hotel administration from the perspective of a general manager. You’ll gain detailed insights into the operations of a full-service hotel, including Human Resources, Front Office, Housekeeping, Food and Beverage, Safety and Security, Sales and Marketing, Accounting, and Facility Engineering and Maintenance.

Housekeeping Management

This subject takes a systematic approach to managing housekeeping operations. You’ll gain a comprehensive overview, from maintaining a quality team, planning, and organising, to the technical details of cleaning each area within a hospitality facility.

Customer Service for Hotel Industry

This module equips you with the concepts and skills for delivering exceptional customer relations, including problem-solving, effective communication, handling challenging customers, and understanding cultural aspects of interactions. You’ll explore customer relations goals, their importance to business success, and current trends and best practices in the field.

Front Office Management

Economic Principles for the Hospitality Industry

This subject introduces you to the basics of Economics, including essential models and theories. It also focuses on functional economics, providing you with a solid foundation to enhance your understanding and prepare you for making better business decisions in the future.

Supervision for Hospitality Industry

This module equips you with the knowledge to develop and support team members through effective objective setting. As teamwork is crucial in the hospitality industry, you’ll learn how to collaborate with clear goals to achieve the desired outcomes.

Hospitality & Tourism Entrepreneurship

This subject introduces you to entrepreneurship in tourism, covering its foundations, innovations, business planning steps, marketing, employment, social perspectives, and the challenges faced by the tourism industry.

Food & Beverage Service Skills

This module is tailored to the foodservice industry, equipping you with fundamental knowledge to perform basic food and beverage service, identify restaurant equipment, plan menus, and develop the essential technical skills needed to operate a restaurant effectively.

Commercial Kitchen Operations

This module immerses you in a “live” kitchen environment, allowing you to experience kitchen operations and management while preparing menu items for the college dining facilities. You’ll engage in practical, hands-on sessions in both mock and real scenarios, honing your skills as a commercial kitchen operator.

Food & Beverage Management

This module is tailored to the foodservice industry, offering a comprehensive guide to managing foodservice outlets, from daily operations to broader hospitality concerns. You’ll explore key sectors, including fast food, casual dining, hotels, fine dining, events, and industrial catering.

Year 3

Industrial Training

This industrial training module places you in selected hotels, providing exposure to various aspects of hotel operations. You’ll gain hands-on experience in front office, reservations, reception, concierge, housekeeping, restaurant service, food production, and back-office support.

MPU Modules

Appreciation of Ethics and Civilisation (Malaysian students)

This subject explores ethics and civilisation within Malaysia’s multi-ethnic society, enhancing your critical thinking and understanding of national unity. You’ll examine their historical evolution, guided by the Federal Constitution, and discuss their relevance amidst globalisation and technological change.

Malay Communication 1 (International students)

This subject equips you, as an international student, to communicate in basic Malay for everyday situations. Through lectures, tutorials, assignments, and real-world experiences, you'll learn simple spoken and written Malay.

National Language A

It aims to enhance your language proficiency in formal and informal contexts through lectures, tutorials, assignments, role-playing, and assessments. By the end, you’ll master both spoken and written language skills.

New Venture Creation

This subject provides a foundation for aspiring and current entrepreneurs to identify and capitalise on opportunities to start and grow sustainable businesses. It equips you to pursue business opportunities in both the public and private sectors, fostering success within the mainstream economy.

Integrity and Anti-Corruption

This module explores corruption, including integrity, anti-corruption, forms of corruption, abuse of power, and prevention strategies to understand integrity, corruption concepts, and measures to prevent abuse of power in society and organisations.

Community Service

This subject develops your communication, critical thinking, and problem-solving skills through community service and cooperative learning. It emphasises social responsibility, leadership, and teamwork, with a focus on community service or co-curricular activities that may extend beyond the college setting.
